Bacon Lettuce Tomato with Guacamole
Makes 4 Servings
Ingredients
1/2 pound bacon (8 to 10 slices)
4 whole grain sandwich rolls, halved
1/2 cup guacamole (prepared or homemade)
4 thin slices tomato
8 lettuce leaves, washed and dried
Directions
Cook the bacon according to package directions until crispy. Pat well between paper towels to remove excess fat. To make the sandwiches, spread 1 tablespoon of guacamole on both sides of each roll. Layer evenly with 1 lettuce leaf, 1 tomato slice, 2 to 3 slices bacon, and 1 more lettuce leaf. Slice and serve.

TIP:
To make lettuce last longer, wash, refrigerate and store in a sealed plastic container or plastic bag with a damp paper towel in the bottom and one on top to absorb moisture.
